Tasty Tuesday - Prosecco Poached Fruit Tarts with Lemon Cream

Over the past weekend we celebrated my dad's 59th birthday. He says he isn't one for "sweets" which is a total lie b/c when ever there are cupcakes or brownies or any baked good around he is eating it. For this birthday I wanted to bake him something different and he love peaches so I sought out a recipe for a peach tart. Here is what I found.


Prosecco Poached Fruit Tarts with Lemon Cream

Ingredients:
1 package (10 oz) Puff Pastry Shells, I used Pastry sheets and had to cut them into 3"x3" squares
6 medium peaches, seeded and diced
1/2 cup Prosecco or dry white wine such as pinot grigio
1/2 cup sugar
1/4 cup apricot preserves
1/2 of an 8-ounce package cream cheese, softened
2 tablespoons butter, softened
1/2 cup confectioners' sugar
1 tablespoon lemon juice
1 teaspoon grated lemon zest
Mint sprigs (optional)

Directions:
Bake, cool and remove the "tops" of the pastry shells according to the package directions.
Heat the peaches, wine, sugar and preserves in a 3-quart saucepan over medium-high heat to a boil. Reduce the heat to low and cook for 5 minutes or until the fruit is tender. Remove the saucepan from the heat. Cover the saucepan and refrigerate for 30 minutes or until the fruit mixture is cool.
Beat the cream cheese, butter, confectioners' sugar, lemon juice and lemon zest in a medium bowl with an electric mixer on medium speed until the mixture is smooth.
Spoon about. 2 1/2 tablespoons lemon cream mixture into each pastry shell. Top each with 1/2 cup fruit mixture. Garnish with the mint, if desired. Serve immediately.

I actually heated the peaches up a little bit and served it with ice cream. Everyone, except one person, loved it. Such a nice change up to birthday cake and a summery treat. The one person that did not like it actually took one bite and said "it is like a french pastry, looks better than it tastes." I wasn't a fan of this person to begin with and am definitely NOT a fan now. How completely and utterly RUDE! She will never eat another dessert of mine again, nor be invited to my house.
