Busy, busy and BUSY!

I have been told that it has been a while since my last post, sorry! It isn't because I have been slacking but rather on the run so much that I have not have time to devote to my computer. Last Friday I left for Beaver Lake in NW Arkansas for the weekend. On Monday I drove to Emporia, KS for Kansas State boys 5A golf, then drove to Manhattan on Wednesday to look at the townhome I am hoping to move into and then took at trip to Tulsa with Audra and Lydia to see Amber and family. Whew. I am exhausted just thinking about it. Oh, friends are hear for a night cap. More to come later! With pictures of course :)

Spinach Artichoke Dip

This is one of the best Spin Dip recipes ever! My friend Dina brought it to my graduation party and it was gobbled up in no time.

1 - 10 oz package frozen chopped spinach, thawed and WELL drained and dry with paper towels
1 - 14 oz can quartered artichoke hearts, drained and chopped
1 - 5.5 oz garlic and herb cheese (Allouette)
1 cup shredded Parmesan cheese
1 - 8 oz container sour cream
1/2 cup mayonnaise
1 - 2 oz jar chopped pimiento, well drained
6 slices crumbled bacon (cooked of course)

In a bowl combine spinach, artichoke hearts, Allouette cheese, Parmesan cheese, sour cream, mayonnaise and pimientos. Spoon into a 11x7 baking dish, sprinkle bacon crumbles on top. Bake 400 degrees for 20 min or until bubbly throughout. Serve with crackers, pita chips or baguette chips.

Awesome job Jeff! Good luck Tuesday.

Last Monday Jeff and his fellow golf-mates took runner up in their Regional Golf Tourney! I am so proud of them. All year they have gotten one place lower due to just one stroke but this time they edged out the 3rd place team for a second place win! It felt so good to be on the winning side. Here are some pictures of Jeff from the last half of the season. Keep up the good work but and don't let an extra stroke or two ruin things. GET IN THAT HAPPY PLACE!!!!

Congrats to me, this is my 200th post and I wanted to save this post for something special and I think I have the perfect topic.

Last week I made a big decision, which job I was going to accept and where. Well I think pictures say a thousand words so here you go....

Yes! Manhattan! Manhattan Kansas that is, the Little Apple :) I am going to be working at The EyeDoctors in Junction City & Topeka but living in Manhattan. I am pretty darn excited about it. I love Manhattan and it is where I went to undergraduate - Kansas State University. I will hopefully have plenty of room in my new place so I would like lots of visitors!

Whew... So when I blog I upload the pictures first and then put in comments... Sit back b/c it has taken me about an hour to put in and arrange all these pictures, yes there are a lot! These are pictures of the Graduation party my parents hosted in honor of my sister Ashley's Cowley College graduation and my optometry graduation. I tried to put the pictures in order of the night but it was hard b/c they came from 2 different cameras. The party was a blast. I had family and friends from all over! I think there was at least 65 people at one point. Lots of food and yummy beverages.
