I have been told that it has been a while since my last post, sorry! It isn't because I have been slacking but rather on the run so much that I have not have time to devote to my computer. Last Friday I left for Beaver Lake in NW Arkansas for the weekend. On Monday I drove to Emporia, KS for Kansas State boys 5A golf, then drove to Manhattan on Wednesday to look at the townhome I am hoping to move into and then took at trip to Tulsa with Audra and Lydia to see Amber and family. Whew. I am exhausted just thinking about it. Oh, friends are hear for a night cap. More to come later! With pictures of course :)

Spinach Artichoke Dip
This is one of the best Spin Dip recipes ever! My friend Dina brought it to my graduation party and it was gobbled up in no time.

1 - 10 oz package frozen chopped spinach, thawed and WELL drained and dry with paper towels
1 - 14 oz can quartered artichoke hearts, drained and chopped
1 - 5.5 oz garlic and herb cheese (Allouette)
1 cup shredded Parmesan cheese
1 - 8 oz container sour cream
1/2 cup mayonnaise
1 - 2 oz jar chopped pimiento, well drained
6 slices crumbled bacon (cooked of course)
In a bowl combine spinach, artichoke hearts, Allouette cheese, Parmesan cheese, sour cream, mayonnaise and pimientos. Spoon into a 11x7 baking dish, sprinkle bacon crumbles on top. Bake 400 degrees for 20 min or until bubbly throughout. Serve with crackers, pita chips or baguette chips.

Yes! Manhattan! Manhattan Kansas that is, the Little Apple :) I am going to be working at The EyeDoctors in Junction City & Topeka but living in Manhattan. I am pretty darn excited about it. I love Manhattan and it is where I went to undergraduate - Kansas State University. I will hopefully have plenty of room in my new place so I would like lots of visitors!
