Thank you Uncle Tim!

My Uncle Tim is from South Dakota and apparently has an amazing garden. The last time he was in town he brought me some yummy fresh green beans. This past weekend he brought me gigantic zucchini... They were the length of my sink! I contemplated making zucchini bread, something I have never made but opted for the healthier choice, to grill them.
I cut them up and put a little olive oil, pepper, garlic powder and my favorite - herbs de provence

Filled up the grill with zucchini goodness ;)

The shrank just a bit but were so tasty!

Coleslaw -- Memphis-style

Over the weekend I made pulled pork & cole slaw... I guess I was missing Memphis, well really just The BBQ shop. Here is my recipe for coleslaw.

Ingredients:

2 - 16 oz bags of packaged coleslaw, rinse & WELL drained
2 medium Carrots peeled, grated
1 medium Green bell pepper cored, seeded, diced fine
1/4-1/2 small white onion, grated
1 1/2 cups Mayonaise
3/4 cup Granulated sugar
2 Tablespoons Dijon mustard
1/3 cup Cider Vinegar
2 tbs Celery seed
1 tsp Salt
1/8 tsp White pepper

Directions:

- Place coleslaw greens, carrots, green pepper & onion in large bowl. Set aside.

- In another bowl, mix together all of the remaining ingredients

- Pour mixture over greens and toss well to combine

- Cover and refrigerate 3-4 hours before serving.

And of course the best way to enjoy coleslaw is over pulled pork, a great bbq sauce & bun (maybe even texas toast) :)

Good for a Wildcat Touchdown!!

Has anyone else been having problems posting pictures on their blog? I had difficulties about 2 weeks ago and then kind of put it on the back burner... Oops. So this past weekend was anything but dull. It was another game weekend and a crazy one at that! My parents came up Friday night, but stayed out way past my bedtime so I didn't get to see them until Saturday morning, the day after my mom's actual birthday.

It was an early game day. We were up at 7:00 and enjoying mimosas and finishing up tailgate treats. Here is my mom and 2 of her sisters, Brenda & Viola. This was Brenda's first KSU football game. I think she enjoyed it after the little storm passed...

me & Abigail. Owen & me. He isn't exactly a wildcat fan... But was a good sport the whole day. :)Here is what caused the little hour delay of game. A shelf cloud?? It seemed to come out of no where and produced some good rain and rotations but no true tornadoes.

Labor Day weekend

I have come to the conclusion, there is only one place to be on Memorial Day, 4th of July & Labor Day or or near WATER! I don't care if it is the beach or a lake. I love being on the water! On Sunday my brother and I headed to Council Grove to hang out with my friends the Clarks.

My parents stopped by on their way home from Manhattan. No that is not our baby, but one that was there. Of course my mom latched onto her when she saw her. She LOVES babys and never gets to see her grandbabies b/c they live so far away.

Fill the Bill!

This weekend marked one of my very favorite days of the year, the start of COLLEGE FOOTBALL!! And what a great day it was. Weather was perfect.
